Here’s a summer-friendly twist on a classic Christmas treat – no cooking required. Icy cold and sandwiched between biscuits, this festive flavoured dessert makes for a refreshing way to indulge in a Christmas tradition – even when the mercury soars. It’s also a great way to use left overs. Just swap out the fruit mince for pudding.

Christmas pudding not your thing? Not a problem. Make a black-forest version by substituting some cherry jam and chocolate sauce in place of the fruit mince and caramel, and sandwich between some chocolate ripple cookies. Or, how about a tropical twist? Use some pureed mango, white chocolate and coconut ice-cream between some Anzac cookies.
